Four un-pho-gettable Vietnamese restaurants in Adams County

It’s hard to escape the pho foodie craze on the Front Range. But there’s way more to Vietnamese cuisine than the warm, scrumptious noodle soup. Winter is on its way, so remember to take a break from the cold weather at these four restaurants in Adams County. Before you can say, “vermicilli noodles,” you’ll be introduced to dozens of exciting new eats, such as cua rang me, goi dac biet and chao tom.

Vietnamese Cafe

The scoop: The simply named Vietnamese Cafe has served Thornton for nearly 20 years. Start your meal with an order of the chao tom — shrimp paste wrapped around sugarcane sticks, then grilled — before digging into one of the pho and stir-fried noodle dishes. Feeling more inclined toward a liquid meal? Try one of the cafe’s 28 flavors of boba tea smoothies, or stop by from 3 to 6 p.m. for the daily happy hour.

The scoop: With its large open dining space, 226-item menu and plates perfect for sharing, Saigon Basil is an ideal destination for big groups and adventurous eaters. Go beyond pho, and try other Vietnamese specialties, such as cua rang me, a whole crab covered in tamarind and chile sauce, or goi dac biet, a hearty combination seafood salad featuring plenty of squid and shrimp. The scoop: This cafe is a great spot if you want to explore other Southeast Asian cuisines in a single sitting. Pho & Grill offers traditional Hmong dishes alongside strictly Vietnamese ones, pulling inspirations from Laos, Myanmar and other neighboring countries. Make sure to try the super thin rice vermicelli noodle dishes, spicy papaya salad and sweet pork with purple sticky rice.
