Last night, El Celler de Can Roca hosted the first of two pop-up dinners at the Halcyon Hotel in Cherry Creek. El Celler is kind of a big deal in the culinary world — it boasts a three-Michelin star rating and it’s constantly ranked as a top three (or the very top) restaurant in the world.
The El Celler crew is in town as part of a partnership with BBVA Compass bank, which sponsored the invite-only dinner. Curious about what one of the very best restaurants in the world serves to warrant all the acclaim? Here’s the Denver pop-up menu:
- Passed appetizers: Campari Bonbon, Seafood Cream and Shrimp shaped into cute little starfish, Powder Truffle Bonbon, Truffle Brioche, Pigeon Parfait
- First course: Little lollipop-like tastes that arrived at each place setting dramatically draped in black fabric, which was then removed to reveal the five bites, each of which was inspired by a different country.
- Second course: Vegetables Consomme with Marinated Scallops
- Third course: Oyster with Fennel Sauce, Black Garlic, Apple, Algae, Champignon Mushrooms, Distilled Earth Essence (your guess is as good as mine) and Anemone Sauce
- Fourth course: Red Prawn Marinated in Rice Vinegar, its own Head Juice, Crunchy Red Prawn Legs, Algae Velout and Phytoplankton (yes, phytoplankton) Bread
- Fifth course: Mackerel with Amontillado Sherry, Orange, Almonds and Green Olive Emulsion
- Sixth course: Sea Bass with Samfaina and Suquet of its Bones
- Seventh course: Ibirico Suckling Pig with Green Papaya Salad, Thai Grapefruit, Apple, Cilantro, Lime, Chili Pepper, Smoked Cashews and Tamarind Puree with Shiso
- First dessert: Lemon Cloud, served with a perfumed cone whose scent is supposed to mimic the flavors of the dish
- Second dessert: Vanilla dessert
Need a translator? You’re not alone. Many diners were Googling “samfaina” (Catalan-style ratatouille) and taking guesses at what “distilled earth essence” could possibly mean. The second dinner takes place tonight at the Halcyon.
