It’s hard to escape the pho foodie craze on the Front Range. But there’s way more to Vietnamese cuisine than the warm, scrumptious noodle soup. Winter is on its way, so remember to take a break from the cold weather at these four restaurants in Adams County. The scoop: The simply named Vietnamese Cafe has served Thornton for nearly 20 years. Start your meal with an order of the chao tom — shrimp paste wrapped around sugarcane sticks, then grilled — before digging into one of the pho and stir-fried noodle dishes. Pho & Grill offers traditional Hmong dishes alongside strictly Vietnamese ones, pulling inspirations from Laos, Myanmar and other neighboring countries. Make sure to try the super thin rice vermicelli noodle dishes, spicy papaya salad and sweet pork with purple sticky rice.
