Carboy Winery confirms it will fill Govnr’s Park Tavern spot in Capitol Hill

Three months after 42-year-old Govnr’s Park Tavern shuttered in Capitol Hill, Carboy Winery confirmed it will fill its spot in a release sent Tuesday morning. 

Carboy opened its first facility in Littleton in 2016, then followed that up with a winery and tasting room in Breckenridge. Now, it will open its third winery at 7th and Logan in Denver. 

The large space will feature a restaurant, wine bar, event space, a wine club and tasting room, according to the release. And, of course, one of the biggest selling points of Govnr’s will remain: the patio. The plan is to open this year.

“Winemakers have to wait for years to realize the potential of vines, grapes and wines,” said Kevin Webber, director of operations for Carboy Winery.  “So, we tend to plan things out for the long term. Govnr’s Park Tavern has been a fixture in the Cap Hill neighborhood for years, and while we’re sad to see it go, we’re honored to be able to succeed them.”
