Conveyor belt hot pot restaurants are a thing, and one’s opening in Denver this month

After a bustling 2017, what’s still missing from the Denver dining scene? Conveyor belt hot pot, that’s what. But not for long.

Chubby Cattle bills itself as the first restaurant in the world to deliver Mongolian, Tibetan and Chinese hot pot ingredients to diners via refrigerated conveyor belts. (We’ll just go ahead and take their word for it.)

It works like this: You pick your broth and spice level (“Deepest Level Hell” is an option) and then all kinds of ingredients — we’re talking live crab, wild mushrooms, lamb and quail eggs — spin through the dining room on conveyor belts, allowing you to grab what you want to dip into the boiling broth.

You pay for what you take off the belts, with broths, noodles and veggies ringing in at just a few dollars and proteins going for more.

The original Chubby Cattle is a Las Vegas sensation, and the Denver version, opening on Broadway in the former Walnut Room space, will be its second location.

“For Denver, we’re really excited because this is our 2.0 — ordering is from an iPad, we have a train system which isn’t in Vegas. It should be a really fun place for people to dine,” said co-owner David Zhao.

Oh, yeah, the train. In addition to the refrigerated conveyor belt, the Denver Chubby Cattle will also have a separate train that delivers specific orders to your table, complete with dramatic “Star Wars” music. Yes, really.

If Chubby Cattle sounds different, it is. The owners, all under age 25, took inspiration from Japanese conveyor belt sushi restaurants, but they wanted to combine that with their own hot pot experience. (Zhao comes from China and his partner, Harby Yang, is from Mongolia.)

Conveyor belt hot pot and a train server can be yours to experience beginning Jan. 28.
