Former popular RiNo bakery to find new life in Longmont

Babettes is about to be reborn in Longmont.

The makers of French breads and pastries that developed a huge following in Denver’s River North Art District neighborhood plan to open a bakery and a pizzeria in Longmont’s Prospect New Town development in February.

Owners Steve and Catherine Scott are hoping for a Feb. 2 opening.

The Longmont couple was looking for a spot to build upon their Babettes brand after the lease on their Denver spot expired in November. Then they found Tom Shook, a developer who offered to lease his building to them on “hard-to-say-no” terms. He even agreed “to do the tenant finish” for them, Steve Scott said. “He’s essentially giving us time to get established,” said Catherine Scott.

“The Scotts were a perfect fit,” Shook said, adding he wanted someone in his space with experience in which he could have confidence.
