Let’s just cut to the chase here: There is a new butter bar in Lyons.
So many questions, right? Not least of all, what the heck is a butter bar and is it amazing and how many different types of butter are there and will my cardiologist approve?
For starters, the butter bar (which has a name — Bella La Crema — but it’s so much more fun to call it the butter bar so I’m gonna stick with that) is a market/bistro in downtown Lyons that sells about a dozen different types of hand-churned organic butter.
And you can try them all at the butter bar. (Go ahead and pretend that was written in all caps, because it should have been.)
The butter bar is the brainchild of Shauna Strecker, a musician-turned-butter-churner. After being diagnosed with health issues in 2012, she bought a cow share for raw milk to try to ease her symptoms. When she started making truffle butter from the milk, her health dramatically improved and she was able to get off of medications.
“I felt like butter has never fully seen its range of potential for being such a primal food. I was floored by how butter has been stripped of its true components,” Strecker said.
Her butters come in flavors like Mayan Chocolate Muse (ground cocoa, cinnamon, coffee and ghost pepper); Monet’s Garden (rose, vanilla and lavender); The Song of India (cardamom, cinnamon and honey); and Evening Capers (capers, lemon zest, tarragon and garlic).
Again, you can try them all at the butter bar and then pick your favorites to take home in a cute little tin. Or buy in bulk. Don’t let me constrict you and your butter consumption.
There’s also food at the butter bar, like cassoulets and a rosemary sage grilled cheese. Her bone broth infused with butter and CBD oil is also gaining a cult following.
While the butter bar is currently licensed to sell beer and wine, Strecker is hoping to add liquor. Three words: hot buttered drinks.
