FIRST LOOK: Inside new restaurant opening in Wazee Supper Club space from Bar Dough, Señor Bear team

Morin, the restaurant that took over the space where Denver’s beloved Wazee Supper Club had been since 1974, will open on Oct. 11.

The team behind Bar Dough, Senor Bear, and the kitchens at Tap & Burger are describing the fare as a contemporary take on French cuisine. 

Here’s some of what to expect: No white tablecloths; a natural wine menu and sophisticated cocktail program (from the husband and wife team of Mary Wright and McLain Hedges, the pair behind RiNo Yacht Club and The Proper Pour); and local riffs on French food with seasonal ingredients, according to a press release.

The Morin team of Juan Padro, chef Max Mackissock and Katie O’Shea have come up with a menu that includes Fuille De Bric (oyster mousse wrapped in a crispy French pastry with seaweed salad); Rosti, a potato waffle with bacon, buttermilk and farmhouse herbs (a breakfasty option on a potato-dedicated part of the menu); wild raw salmon with creme fraiche, sorrel granite, radish, cucumber, and salmon roe; and Porcelet, a rib chop with smoked apple butter, O’Leary apple maple glaze, charred cabbage and herbs.

Among the bar offerings: A classic daquiri, boozy tea, simple, yet refined martinis, and special wines without the silly sulfites.

Denver developer and preservationist Charlie Woolley worked on the building with Denver’s Culinary Creative Group, telling The Post in November that the team wanted “to honor the space and bring it back to some former glory, make a really nice space that is really of the neighborhood.”

The Wazee — a LoDo mainstay where customers (including former President Barack Obama) scarfed pizza during a 40-year history — opened in lower downtown Denver when the area was a desolate former commercial and industrial hub. It closed in January of 2018.
